I would like to set up a Mac computer for reading documents.
I would like it to have two really large video monitors for viewing two pages of documents side by side. I would like these monitors to work under Parallels as well as Mac OS. And I would like the system to include a RAID controller for hard drive redundancy.

Mac OS X comes with software RAID 0 (striping) and RAID 1 (mirroring) capability built into the operating system. So unless you want a hardware RAID for some reason, any model Mac will do.
If you do want a hardware RAID, you'll need the Mac Pro. And the Highpoint RocketRAID 2640X4 seems to be a good performer when it comes to Mac RAID cards:
Have you been to an Apple store to check out the Cinema displays? One single Cinema display can *easily* display two or three documents side-by-side, depending on the document width.

I have a 24" iMac and a separate monitor. These work with OS X and Parallels/Windows. Moving my cursor from one monitor to the other comes with a delay similar to (and larger than) the one I see when I click on Search in iTunes and start typing too soon, it doesn't go in the window. I believe that's part of the Mac philosophy that I haven't gotten used to yet.
I keep my other monitor twisted sideways, so it's about half as wide, and several inches taller.

Absolutely not!
I've used multiple displays on Macs for years and years, and there's no lag at all moving the cursor from one display to the other. Whatever supposed delay you're experiencing with whatever window you're talking about is in no way, shape, or form normal for Macs.

I will probably test it someday when I have nothing better to do, but since I don't want to actually use it that way, there's no hurry. Meanwhile, it's interesting to know that this is not a universal issue.
